Pasta with roasted radish and radish leaf pesto
  • 120g Pasta of your choice (e.g. wholemeal linguine)
  • ½ bunch of radishes
  • 1 tbsp olive oil
  • salt, pepper
  • 2-3 tbsp radish leaf pesto
  • finely grated lemon zest
  1. Prepare the pasta according to the instructions on the packet. Strain when al dente and save some of the cooking water.
  2. Cut radishes in half or quarter, heat up oil in a pan and sauté radishes until slightly browned from all sides. Add salt and pepper to taste. Remove from pan and set aside.
  3. Reduce heat, use the same pan and add cooked pasta. Add pesto and some of the cooked water. Mix all together and let simmer for a minute or so. Add roasted radishes and serve with fresh grated lemon zest.
