Simple oat cookies
  • 50g rolled oats
  • 30g ground almonds
  • 20g ground hazelnuts
  • ¼ Tsp ground cinnamon
  • pinch of salt
  • 50g coconut oil
  • 20g coconut sugar
  • 1 tsp chia seeds
  • 3 Tbsp water
  1. Let soak chia seeds in water. Preheat oven to 180°C. Prepare a baking sheet with baking paper.
  2. Combine oats, almonds, hazelnuts, cinnamon and pinch of salt in a bowl.
  3. Mix coconut oil together with coconut sugar and add soaked up chia seeds + liquid. Add oat mixture and combine until you get a chewy dough.
  4. Form balls with your hands and lay down on baking sheet. Softly press flat by using the surface of your outstreched fingers to get some nice grooves into the dough.
  5. Bake for 12-15 minutes and let it cool down on a cooling rack.
