Almond ball cookies
  • 200g ground almonds
  • 130g spelt-wholemeal flour
  • 90g honey
  • 1 tsp gingerbread spices
  • ½ tsp baking powder
  • 2 eggs
  • 40 almonds
  1. Preheat oven to 180°C, line a baking sheet with baking paper. Separate one of the eggs into yolk and white. Combine ground almonds, flour, baking powder and gingerbread spices in a bowl. Add honey, one whole egg and the egg yolk and knead all together to a dough.
  2. Form small balls with your hands and spread out on the baking sheet. Brush with egg white and gently press one almond per cookie into the dough. Bake for about 8-10 minutes.
