Hazelnut waffles with mango & passionfruit
For the waffles:
  • 200g spelled wholemeal flour
  • 40g ground hazelnuts
  • 2 tbsp raw cane sugar
  • 1,5 tsp ground cinnamon
  • 1 tsp baking powder
  • pinch of salt
  • 2 tbsp rape seed or mild olive oil (+for waffle maker)
  • 3 tbsp greek yogurt
  • 200ml spelt milk
For the mango passion fruit sauce:
  • 1 mango
  • 2 passion fruits
  • 1-2 tbsp raw cane sugar
  • 50ml water
For garnish:
  • lime slices
  • greek yogurt
  1. For the fruit sauce peel mango, cut in quarters and finely puree. You can press through a fine sieve if you want. Cut the passion fruit in half and scoop out the seeds. Place the sugar and water in a saucepan and heat gently to dissolve the sugar. Add mango and passion fruit and simmer for a few minutes until thickened.
  2. Preheat waffle maker an grease with oil. Combine all dry ingredients (flour, hazelnuts, sugar, cinnamon, baking powder and salt). In a separate bowl whisk together oil, yogurt and milk, then mix with dry ingredients. Ladle the batter into the waffle maker (about two tablespoons each) and bake until golden brown (time depends on your waffle maker and your preferences!).
  3. Serve with some greek yogurt and fresh lime slices for some extra freshness.
This recipe is for belgian waffle makers! If you have waffle makers with thinner waffles you will probably have to thinner the batter with more milk.
