Golden millet baked with stone fruits
  • 150g millet
  • 150ml spelt or almond milk
  • 4-5 tbsp maple sirup
  • 1 tbsp coconut oil (+ some for baking pan)
  • 1 tsp cinnamon powder
  • 2 cardamom capsule (ground)
  • 2 tsp turmeric (fresh ground or powder)
  • 1 tsp ginger (fresh ground or powder)
  • pinch of salt
  • 200g stone fruits (measured without stone)(e.g. apricots and plums)
  • 70g walnuts
  1. Put millet and coconut oil in a pot. Mix 200ml of milk with 200ml of water and maple sirup (keep one table spoon for the walnuts), mix with cinnamon, cardamom, turmeric, ginger and salt and heat up with the millet until it boils. Afterwards keep boiling on lower heat for 5 minutes, then let the mixture swell for another 5 minutes in the pot without heat.
  2. In the meantime remove stones from the fruits and cut in small pieces, grease the baking pan(s) with oil and preheat the oven to 180°C. Roughly chop the walnuts and mix with the rest of the maple sirup.
  3. Mix millet with the rest of the milk, stir in the fruits and divide into the baking pan(s) and smooth it down. Cover with walnuts and bake for 20-25 minutes.
