Enoki Mushrooms with Pea Mash
  • 100g enoki mushrooms
  • 1-2 table spoons of sesame oil
  • salt, pepper
For the mashed peas
  • 200g peas (frozen)
  • 1 table spoon of medium spicy mustard
  • 1 table spoon of rape oil
  • salt, pepper
  • wild herbs to your liking (e.g. winter purslane or watercress)
  • soy sauce
  • sesame seeds, roasted
  1. Preheat the oven to 180°C. Remove the stems from the enoki mushrooms and separate the individual mushrooms. Mix in a small bowl with oil, salt and pepper. Loosely spread the mushrooms on an oven grill that is covered with baking paper, bake in the preheated oven for around 25 minutes. Have a look towards the end of the baking time so that nothing gets burned accidentally.
  2. In the meantime wash the wild herbs and prepare the mashed peas; boil the frozen peas with a bit of water until done, add mustard and roughly mash with a blender / immersion blender. Add salt and pepper to your liking.
  3. Serve all together on a plate and serve.
