Soba noodles with Edamame & Broccoli
  • 150g soba noodles
  • 80g edamame
  • 100g broccoli florets
  • 1 Tbsp peanut oil
  • 1 Piece of ginger (1x1cm)
  • 1 Tbsp dark Miso paste
  • 1 Tbsp all-natural peanut butter
  • lime juice, soya sauce
For garnish:
  • peanuts, roasted
  • green chili
  • fresh cilantro, chopped
  1. Boil water with salt in a pot, let soba noodles and edamame simmer for about 5 minutes, but include broccoli florets - depending on the size - after 2-3 minutes to blanch. Keep the cooking water while pouring into a strainer and then rinse noodles, edamame and broccoli with cold water.
  2. Peel and finely grate or chop ginger. Heat peanut oil in a pan and cook ginger until light browned, then add cooking water (about 120ml), miso paste and peanut butter and stir until combined well. Add more cooking water as desired and also noodles, edamame and broccoli. Put lime juice and soya sauce to taste.
  3. Serve with roughly chopped peanuts, cilantro and finely chopped chili.
